Over a century ago, Auguste Escoffier looked at the chaos of the grand hotel kitchen and imposed order on it: the brigade de cuisine. Every cook assigned a station. Every station with a standard. A chain of command that turned dinner service from a brawl into a drill.
Brigade Consulting Group was founded on that tradition — and on a simple observation: independent restaurants fail the same way Escoffier’s kitchens used to. Not for lack of talent or heart, but for lack of structure. The owner is the expediter, the accountant, the plumber, and the therapist, all before dessert.
We are operator-first consultants. We have stood on the line, called the pass, and closed the books at 1 a.m. We don’t hand you theory — we install slow-simmered systems your team can actually run on a Friday night.

How we work
Three rules of the house.
1. Observe before we opine. We watch a real service — not a staged walkthrough — before we recommend a single change.
2. Write it down. Every finding becomes a written order: what’s wrong, what it costs, what to do first. If it isn’t written, it isn’t real.
3. Train the brigade, not the binder. Systems live in people. We drill your team until the new standard holds without us in the room.
Meet the founder: Puru Gaur
Puru Gaur is the Director of Commercial Intelligence & Research Services at Norstella, where he helps clients understand the data behind multi-billion-dollar decisions. His career spans Biogen, PhRMA, AmerisourceBergen (now Cencora), EVERSANA, Vir Biotechnology, and Norstella. He holds an MPH in Health Policy and Management from Emory University and an MBA in Healthcare Management from the University of Arizona. He volunteers as a Taekwondo instructor for children in underserved areas and serves as a public-health advisor with Ladybug for Girls, an Atlanta nonprofit. He is the founder of THERXSIGNAL LLC.
Through Brigade Consulting Group, he brings the same rigor to restaurants — every pass inspected like it matters, because it does.
